February 7, 2015: Champaign, IL. After eating at Biaggi's two weekends in a row (yikes!), I decided it was time to figure out how to make the best part of every meal. My boyfriend and I can easily eat two baskets of this bread before even ordering our meal, and it definitely rivals with Olive Garden's bread sticks. Luckily I was able to find the recipe online and tweak the toppings to exactly what we like best. It made a TON of the little "sticks" of focaccia, and it is even better the next day!
Ingredients
1 & 1/4 Cup Whipped Mashed Potato's
3/4 Cup Whole Milk
1/2 Cup + 3 TBSP Chopped Red Onion
2 TSP Kosher Salt
1 TBSP Oil
1 TBSP + 1 TSP Yeast
1/2 Cup Warm Water
1 TBSP + 1TSP Olive Oil
3 Cups Flour
Directions
After making the mashed potato's (kind of a pain, but worth it in the end!), mix them in a bowl with the onions, salt, oil, and milk in a sauce pan on low heat. While this is warming up whisk together the yeast, warm water, and oil until the yeast is fully dissolved. Next, combine the yeast mixture, warm mashed potato mixture, and the flour in a large bowl and mix on medium speed for 3 minutes.
Oil a baking sheet, and then spread the dough until it is about an inch thick. Next, spread oil across it and sprinkle with your favorite toppings. We used crushed basil, salt, garlic salt, and pepper. At Biaggi's they use crushed red pepper which gives it a little more of a kick!
Lastly, bake on 350 for 10 minutes, rotate, and then bake for another 10 minutes or until golden brown.
