National Pancake Day!

March 3, 2015.  Wadsworth, IL.  Happy National Pancake Day everyone!  I have to say that I LOVE pancakes, breakfast foods that are essentially desserts are my favorite.  I definitely would eat breakfast for 3 meals a day, but  I am not so sure my mom would be okay with buying me that many pancakes.  So, the occasional pancake will have to suffice.  Aside from being obsessed with breakfast foods, if you know me personally (or you know what I like to eat, haha) I am equally obsessed with apples.  Wait for it... I made Apple Pancakes!  This recipe I actually found on Pinterest, here, but of course I modified it.

The first time I made these, and took pictures, I followed the recipe exactly.  Now that I have made them three times, I have changed it up a bit!
Ingredients:  

  • egg
  • 1/2 cup yogurt (any kind that is relatively plain! Today, I used Light&Fit vanilla yogurt-80 calories.  You can use plain, unflavored, yogurt, you can use greek yogurt, whatever your heart desires!  I have done all of those options and yet to notice a difference.)
  • 1/2 cup skim milk (Today, I used skim milk instead of the original recipes half & half, and I honestly could not tell the difference!  Skim milk is better for you, so that's what I would use.  It's also a more common thing to have at your house.)
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt (I do not ever add salt to anything, and never notice.)
  • 2 tablespoons sugar (If you use vanilla yogurt, this much sugar is unnecessary. 1 1/2 teaspoons.)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • large apple (The original recipe calls for a Fuji apple, all 3 times I have made these I used a different type of apple and I think any kind is fine.  I would recommend an apple that is red/green in color, mixed.)
Combine egg, yogurt, milk. Mix until even consistency. Then add everything else (all the dry stuff) and whisk!

 
This is the hardest part, and it's not even difficult.  Core the apple if you want, today I did not and I have all of my fingers still!  Then go to town and shred that apple.  The original recipe said to remove the peeling, but that's my favorite part and the part that's best for you!
Cook the pancakes! The batter should make about 12, maybe a little less.  They may look chunky, but they won't be.  My mom and I found that the outsides cook faster than the insides, so turn down the heat to get an even cook.  Don't forget to spray your Pam!
Top with powdered sugar and syrup, or nothing!  They are so tasty on their own, if you want to keep it low-cal eat them plain!  
Mckenzie calculated each pancake to be about 60/70 calories, so eat as many as you want!
