February 1, 2015: Champaign, IL. One day I will eat something other than guacamole, but the Super Bowl is definitely not the day to start! Today I also made my own baked tortilla chips, which turned out very good and healthy since they are not fried. I hope everyone is having a great sunday!
Recipe
2 ripe avocados
1 small yellow onion
1/2 lemon or lime
1 TBS minced garlic
Salt and Pepper to taste
Start by cutting and peeling both avocados and mushing them up in a bowl. Chop the onion, mince the garlic, and then add the rest of the ingredients to the avocado and combine with a fork. When making in advanced, keep the nut from inside of the avocado and place it in the center of the guacamole to keep it fresh.
1 pack of Whole Grain Tortillas
Spray bottle of olive oil
Preheat the oven 375 degrees. Spray both sides of the tortillas lightly with olive oil, and then cut them like a pizza into triangles. Place in a single layer on a cookie sheet and bake for 10 minutes, flip each chip over and cook for 3-5 more minutes depending on the strength of your oven. You definitely need to watch these to make sure they don't burn, a dark golden brown color is ideal.
