French Bakes

 January 17, 2014: Wadsworth, IL.  I was going to title this post "French Fries", but if they aren't actually fried how could I call these delicious little sticks of health such a greasy, nasty name?! Don't get me wrong, I love McDonald's fries just as much as anyone, but I also love fitting into my jeans.  After a lot of troubleshooting for this recipe, I've found that the secret is to soak the potatoes to rid them of some of their starch.  Doing this adds to the time consuming process, but definitely helps in making them crispier.

Recipe
5 large golden potatoes
2 TBS olive oil
Salt and Pepper to taste

Using a mandoline slicer, cut all of the potatoes into matchsticks.  Next, soak the cut potatoes in cold water for an hour, then blot them dry with a paper towel.  Toss in a bowl with olive oil, salt and pepper.  Lastly, lay them on a greased pan and cook for 35 minutes on 400, then at 450 for the last 20-25 minutes (until golden brown and crunchy).
