Whenever I don't know what I am hungry for I snack on little pieces of everything, a chip here and a chocolate truffle there; but, when I review what I have eaten all day I realize how many calories I consume just trying to find something to eat! I've been looking for easy snacks that will leave me feeling satisfied and full, and after eating my entire batch of zucchini chips in one day I stumbled across these granola energy balls. It only took about 10 minutes to make them and I had all of the ingredients on hand! They're protein packed and have just enough chocolate to curve any craving. I replaced shredded coconut from the original recipe with almonds, as long as the ratio of wet to dry ingredients stays the same you should be able to use almost anything!
Ingredients
1 & 1/4 cup oats
3 Tbs honey
1/3 cup peanut butter
1/3 cup chocolate chips
2 Tbs chia seeds
1/4 cup almonds
Step 1: Combine all ingredients in a bowl and stir for a few minutes until the peanut butter has coated the oats. Chill in refrigerator for 30 minutes.
Step 2: Roll into balls and place on parchment lined cookie sheet. Place in freezer for 30 minutes.
Step 3: Enjoy! Store them in the fridge for up to a week.
